A hearty side dish or serve over greens or diced tomatoes for a meal in itself. Full of fiber and omega-3s from the olive oil and edamame. Easy to prepare! Ingredients

    Edamame (approx 2 cups), shelled and cooked
    1 can garbanzo beans
    1 can black beans
    1 can great northern beans
    1/2 cup olive oil
    1/3 cup cider vinegar (or can substitute any other vinegar)
    1/3 cup sugar (or can substitute stevia to decrease calories and sugar)

Directions

Rinse and drain all beans. In a small bowl, whisk together oil, vinegar, and sugar. Pour dressing over beans and refridgerate at least 3-4 hours before serving.

Note: olive oil will congeal after refridgeration; set out for approx. 20 minutes and stir well before serving.
