    Bacon, 2 slices thick cut, diced
    Beet greens, fresh, 4 cups. trim stems and dice them 1/2" long, set aside. Roughly chop leaves (1" pieces)
    Onions, raw, .5 cup, chopped
    Granulated Sugar, 1 Tbl
    Paprika, 1 tbsp
    1/2 cup water
    Red Wine Vinegar, 2 tbsp


Brown bacon
Add onions and stems, cook till onions are transparent
Lightly brown garlic
Add water, sugar, and paprika, return to boil
Put leaves on top, cover, cook 15 min
Add vinegar and serve
