Introduction

Oatmeal bars spread with a thick layer of blueberry jam and topped with more of the oatmeal mixture. These are not low in fat, but are a good treat for once in a while! Ingredients

    1 3/4 c. King Arthur 100% Unbleached White Whole Wheat Flour,
    1 1/2 c. Old fashioned oats
    1 c. Brown Sugar
    1.5 tsp. Cinnamon, ground
    1 c. Butter, salted
    1 c. Blueberry jam

Directions

Preheat ove n to 325 Degrees F. Stir together the flour, oats, brown sugar, and cinnamon until blended. Using a pastry blender or 2 knives, cut butter until the mixture forms large coarse crumbs the size of peas. Remove 2 cups of this mixture and set a side. Butter a 9 inch square pan and press the remaining crumb mixture into the bottom of the pan. Drop teaspoons of the jam evenly over the crust, then spread lightly with a knife. Sprinkle remaining crumb mixture over the jam. Bake until the top is lightly browned, about 50 minutes. Let it cool for about 2 hours, then cut into 25 small peices.
