    4 4oz boneless, skinless chicken breast halves
    1/4 C dijon mustard
    3/4 C Heartsmart Bisquick
    1 1/2 lbs small red potatos
    1 medium red bell pepper, cut into pieces
    1 medium onion, cut into pieces
    1/4 C grated Parmesan cheese


Heat oven to 400. Spray jelly roll pan, with cooking spray

Brush chicken with 2 tsp of the mustard, then coat with bisquick. Place 1 chicken breast half in each corner of the pan.

Place potatoes, bell pepper and onion in center of pan; brush vegetables with remaining 2 T mustard. Spray chicken and vetgetables with cooking spray; sprinkle evenly with cheese and paprika.

Bake uncovered 34 to 40 minutes, stirring vegetables after 20 minutes , until potatoes are tender andjuice of chicken is no longer pink when centers of thickest pieces are cut.
