This is so easy to make and very tasty. This is so easy to make and very tasty.
Number of Servings: 4


    1 Tablespoon Olive Oil
    1 Onion, Diced
    1 Cup Snow Peas sliced. I use Baby Green Beans
    1 Red Capsicum, Sliced
    600g Fish or Seafood Pieces ( Fish Prawns Squid etc)
    1 x 45g Packet McCormick Thai Seafood Curry Mix
    1 x 375ml Carnation Light Coconut Flavored Milk
    1?2 Cup Water


Heat oil in large pan and fry onion and capsicum for 3-4 minutes.

Add the fish or seafood to pan and stirfry for 2 minutes then add packet contents, coconut milk and water

Cook while stirring for 3-4 minutes then remove from heat and serve.

I serve it with brown rice or you can have noodles.
