Green Peppers (bell peppers), 0.25 cup, strips
Peppers, sweet, red, raw, sliced, 0.25 cup
Old El Paso Fajita Seasoning Mix, 0.25 tsp
Tortilla 9inch-Dempster's, 1 serving
Sour Cream- Farmer's fat Free, 2 tbsp
Mozzerella- Part Skim, 0.25 cup
Salsa-Compliment's, 0.25 cup
Chicken Breast-Maple Leaf-Boneless Skinless, 2.5 oz
Directions
Directions:
1.Preheat the broiler. Grease a baking sheet.
2.Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
3.Preheat oven to 350 degrees F (175 degrees C).
4.Heat the oil in a large frying pan over medium heat. Stir in the green bell peppers, red bell peppers, mushrooms and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
5.Place a tortilla on a baking sheet and layer with the chicken and vegetable mixture, then sprinkle with the cheese. Fold tortilla in half
6.Bake quesadillas in the preheated oven until the cheese has melted, about 10 minutes.
Serve with low fat sour cream and salsa.
