Number of Servings: 12

Ingredients

    1 cup soaked almonds
    1/2 cup soaked pumpkin seeds
    1/4 cup flax meal
    1 cup soaked cranberries
    1/2 cup fresh coconut or shredded coconut
    2 TBS raw brown rice protein or 2 TBS raw nut butter
    1/2 cup raw coconut oil or extra virgin olive oil
    1 TBS raw agave nectar or honey
    1.5 tsp pure vanilla extract
    1/4 cup raw cacao nibs or dark chocolate chips

Directions

Combine soaked nuts and seeds into food processor and pulse till chunky. Add remaining ingredients except cacao nibs and pulse until texture is grainy. Press mixture into 8 x 8 baking dish and top with cacao nibs and push them into mixture. Put into refrigerator for 30 minutes to set up. These freeze well and make about 12 servings depending on your desired thickness.
