Ingredients

    5 cups wild mushrooms - boletes, bleeding milkcaps, morels, etc., thoroughly cleaned and chopped
    4 tbsp olive oil
    3 cloves garles, minced
    2 cups of dry polenta
    1 tsp basil
    1 tsp salt
    6 cups of water

Directions

Bring water to boil in heavy pot. Add butter, basil, salt and polenta. Lower heat to med and stir continuously for 10-15minutes. Polenta will thicken. Lower heat to lowest setting and continue to cook for 5 more minutes, add asiago or mozzarella to polenta and place into bowl.

Saute chopped mushrooms with olive oil and garlic. 5 - 8 minutes. Add chili flakes for additional zest (optional).
Serve mushrooms over polenta. Yumm!
