Number of Servings: 4

Ingredients

    1 1/2 C thinly sliced red bell pepper (about 1 medium)
    1 1/2 C thinly sliced onion (about 1 medium)
    1 lb flank steak
    1 T chili powder
    juice from 1 lime
    2 1/2 t olive oil
    1 t kosher salt
    8 garlic cloves, minced
    8 extra thin corn tortilla
    3 T chopped fresh cilantro
    6 T reduced fat sour cream

Directions

Heat and grill pan over medium-high heat. Coat pan with cooking spray. Add bell peppers and cook 4 minutes. Add onion to pan; saute 10 minutes or until vegetables are tender. Place bell pepper mixture in a large bowl; cover and keep warm.

Add beef to pan; cook 7 minutes or until desired degree of doneness. Cut flank steak AGAINST the grain and add to bell pepper mixture. Add chili powder, lime juice, oil, salt and garlic to bowl. Toss to coat.

Heat tortillas. Spook steak mixture evenly over 8 tortillas. Top each with 1 t cilantro and 2 /4 t sour cream.

Yield: 4 servings (2 tacos per servings).

    these were delicious and reminded me of the authentic tacos we got while in mexico. the only thing was they were very messy and the tortillas fell apart. topped them with fresh salsa, reduced fat cheese and light sour cream. they were delicious and ill make them again! - 2/23/11

    Incredible!
    This was delicious. I cut the meat into small pieces and marinated with onions & garlic and the other ingredients and then cooked mixture together. Served on warm tortillas with shredded cheese, pico de gallo, lettuce and cilantro. yummy! - 2/13/08
