An easy stew that will warm the stomach and it very good for you. This fiber filled blend of vegetables and spice is simple and delicious. Great served with fresh cornbread. Ingredients

    2 tbsp Extra Virgin Olive Oil
    1/2 cup White Onion, chopped
    1/2 cup Celery, chopped
    3 cups Water
    1 cube Not-Chick'n Gluten Free Vegan Bouillon
    2 (14.5 oz.) cans Peeled Tomatoes and Jalapeno Peppers
    2 (15.5 oz.) cans Dark Red Kidney Beans
    1 medium head of Cabbage, shredded
    4 medium Potatoes, diced
    3 medium Carrots, chopped
    1 large Green Bell Pepper, chopped
    1 cup Unsweetened Applesauce
    1 tbsp Ground Chili Powder
    1 tbsp Ground Cumin
    1 tbsp Dried Cilantro
    Salt & Pepper to taste

Directions

In large stock pot add olive oil, onions and celery and cook until vegetables are tender.

Combine remaining ingredients and bring to a rapid boil for approximately 10 minutes. Reduce heat to medium simmer and cook for another 45 minutes or until potatoes are tender. Stir occasionally, adding water if necessary.

Makes approximately 10 (1 1/2-cup) servings.
