Ingredients

2 eggs
1 Tbs. Parmesan grated
1 1/2 cups Panko (with spices) crumbs
1 medium large eggplant sliced
1 Tbs evoo
Pam cooking spray
Directions
Slice eggplant into rounds. salt them if you would like.
Mix eggs with the Parmesan and add a teaspoon of water.
Wisk together
Place panko in a separate bowl.
Preheat oven to 400
Grease to cookie sheets with olive oil
Dip eggplant into the egg mixture and then into the panko
Place on cookie sheets
Lightly spray all eggplant with Pam
Cook until tender and lightly browned on both sides
Aprox.: 10 minutes
