Ingredients

2 Whole Wheat Tortillas
2tbsp Fat-Free Refried Beans
4oz Shredded Taco Chicken
1/2 Cup Kraft 2% Shredded Mexican Blend Cheese
2tbsp Light/Low-Fat Sour Cream
2tbsp Salsa
Shredded Taco Chicken:
1lb boneless, skinless chicken breast
2 Cans Fat-Free Chicken Broth
1 Pkg Taco Seasoning
Directions
Prepare Shredded Taco Chicken in crock pot for 3-4 hours prior to making quesadillas.
1. Place chicken in crock pot
2. Add 2 cans Fat-Free Chicken Broth
3. Stir in 1 Pkg Taco Seasoning
4. Cook on Low for at least 3 hours
5. Transfer Chicken to bowl
6. Shred with fork
Quesadilla Prep Directions:
1. Layer tortilla, refried beans, cheese, chicken, cheese, tortilla
2. Spritz medium size fry pan with Olivio Spray Butter
3. Transfer quesadilla to fry pan
4. Spritz top of quesadilla with Olivio Spray Butter
5. Cook on medium heat 5 minutes and flip
6. Cook on medium heat 5 minutes
7. Transfer to plate
8. Cut into quarters
9. Divide 2tbsp Light/Low-Fat Sour Cream & spread Sour Cream over top of quesadilla pieces
10. Divide 2tbsp Salsa & spoon over top of quesadilla pieces
