Introduction
A decently fast, and delicious dinner, that seems to me to be healthier than most. I drink two slim fasts a day, and this is a little bit over 600 calories but it keeps me around or a little under my goal. Ingredients

Package of catfish, 1 filet for each person
1 cup of non instant white rice
Velveeta cheese 6oz
2 tbsp of olive oil
Directions
First for the rice since it takes long, boil 2 cups of water with 1 tbsp of olive oil, make sure the pot has a lid cause you will need it later. After it begins boiling, add one cup of rice, (one cup of non instant rice makes 2 cups, you can put 1 cup in the fridge for later.) After you put rice in put it on simmer and let the boil settle down then leave the lid on and stir only every 10 mins, it wont stick cause of the olive oil, but the rice is done when all water is absorb, taste test to be sure.
For the fish, I put a little garlic salt on both side, some nature seasons pepper, a little lemon pepper, (be sure to spray pan) then let it cook till both sides are a little golden brown and the fish meat is white.
For the rice i add in garlic and natures seasons pepper, everyones preferance is different, and stir in a tablespoon of olive oil, mix well and there you go.
