Introduction

Ingredients

    1 8 oz package shirataki spaghetti noodles
    2 tbsp EVOO
    3 cloves garlic, chopped
    2 slices turkey bacon
    1/8 tsp crushed red pepper
    3/4 lbs cherry tomato
    2 tbsp shredded basil
    1/2 cup grated parmesan cheese, divided
    salt & pepper to taste

Directions

Drain and rinse shirataki noodles. Dry well. Microwave noodles for 1 minutes and drain and dry again. Cut noodles if you prefer them a little shorter.

Heat oil in a large skillet over med-hi heat. Add garlic, stir 30 seconds. Add turkey bacon and red pepper; saute until bacon is crisp. Add tomatoes and crush with back of a wooden spoon. Saute until tomatoes are soft, about 4 minutes.

Add noodles to the tomato mixture. Add half of parmesan and basil. Toss over med heat until cheese melts and sauce coats pasta. Season with salt and pepper. Top with remaining cheese and basil.
