Ingredients

    2 cups whole wheat pasta
    4 plum tomatoes, chopped
    1/2 medium cucumber, halved lengthwise and sliced
    2 green onions, sliced
    3 tbsp sliced pitted ripe black olives
    1/4 cup olive oil
    1/4 cup lemon juice
    1 tbsp fresh basil or 1 tsp dried basil
    1 tbsp fresh oregano or 1 tsp dried oregano
    3 cloves garlic, minced
    1/8 tsp salt
    1/8 tsp pepper
    1/2 cup crumpled feta cheese

Directions

1. In a large saucepan cook the past in boiling lightly salted water according to package directions; drain. Rinse with cold water; drain.

2. In a large bowl toss together the cooked pasta, the tomatoes, cucumber, green onions and olives

3. For dressing, in a screw-top jar combine the oil, lemon juice, basil, oregano, garlic, salt and pepper. Cover and shake well. Drizzle over pasta mixture; toss gently to coat.

4. Cover and refrigerate for at least 2 hours or overnight. Before serving, add the feta cheese; toss gently to combine.

Makes 6 - 8 servings.
