Introduction
These mini frittatas are great to make on Sunday and have for breakfast the entire week. These mini frittatas are great to make on Sunday and have for breakfast the entire week.Number of Servings: 10
Ingredients

3 eggs
4 egg whites (this can be adjusted based on how much cholesterol you want to eliminate)
1/4 cup heavy whipping cream
5 slices of bacon
One large bell pepper, diced and sauteed
5 z crumbled feta cheese
Crushed red pepper to taste
Directions
Cook the bacon and crumble.
Cook the peppers until tender.
Preheat the oven to 375.
Whip the eggs for a good 5-7 minutes.
Add the cream and whip for a good 2-3 minutes (you want the mixture foamy).
Add the crumbled bacon, peppers, and any spices you want and mix well.
Ladle into muffin tins and bake for 5 minutes.
Pull out and sprinkle some feta cheese on top of each muffin (this keeps the feta on the top of the frittata which makes it look pretty. You can always just blend it in as well).
Bake for another 20 minutes or until golden and puffy. They will fall after you remove them from the oven.
