Introduction

A mostly egg white omelet with loads of fresh veges and a hugh taste. A mostly egg white omelet with loads of fresh veges and a hugh taste.

Ingredients

    1 large egg
    3 egg whites
    1/2 medium vidalia onion - diced
    1 medium green bell pepper - diced
    1 large roma or 3 grape tomatoes cubed
    1/2 Cup Fresh Baby Spinach
    2 Tbl (1oz.) Feta Cheese

    Optional:
    Adobo
    Seasoned Pepper

Directions

In medium bowl beat whole egg with egg whites. Add adobo and pepper to taste(optional). Over med-low heat cook eggs in 8-10" frying pan ( use crisco spray to keep from sticking). Once eggs have set add veges (you may choose to saute the onions and peppers first or leave raw). Sprinkle cheese over top and cover for 2-3 minutes. Fold and serve. Feeds 1 Husband (I personally can only eat 1/2)

    Very Good
    It was tasty and easy to fix. I had to cut the onion in half, so a quarter of a med to small onion will do. I also saute the onion in a little olive oil and a 1/4 of a slap of butter, with 1 minced garlic clove. I also coarsely chopped the spinach. The whole family loved it! - 9/4/10
