Ingredients

Whole Wheat English Muffin, 2 serving
Tomato Sauce, .25 cup
Garlic, 2 tsp
Red Ripe Tomatoes, .25 cup cherry tomatoes
Onions, raw, .25 cup, chopped
Monterey Jack Cheese Hill Country Fare, 2 serving
Goat Cheese, Soft, 3 oz
oregano, 0.25 tsp
basil, 0.25 tsp
red pepper flakes or cayenne pepper (optional), .25 tsp
Directions
Makes 4 muffin pizzas; preheat oven 450 degrees.
Take 2 servings of muffins and separate each muffin
so that you have 4 muffins. Spray cookie sheet with
fat-free canola oil and place all 4 muffins on sheet.
Next take tomato sauce (I use tomato sauce that has oregano and basil in it) portion out 1/4 cup of sauce
and divide sauce for each muffin.
Then add minced garlic on top of muffins.
Dice tomatoes and onions, and measure
1/4 cup for each topping and add veggies
on top of muffins. (**You can add any veggie
topping you like. Also if you like meat, you can
add any meat topping too).
Take goat cheese and crumble cheese on
top of each muffin.
For the monterey jack cheese, I had sliced
cheese so I took 2 servings of sliced monterey
jack cheese and ripped cheese into pieces and
added pieces on top of muffins.
Before putting muffins in oven, sprinkle 1/4 tsp
of oregano and 1/4 tsp of basil evenly over each
muffin and do same for red pepper flakes.
Put muffins in oven and cook for about 10-12 minutes
until cheese is bubbly and golden brown.
