Introduction

Ingredients

12 oz. cooked chicken breast meat
1/2 t olive oil
1 1/2 t minced garlic
1/4 ground cumin
3cups chicken broth
1 can corn, drained
1 can black beans, undrained
1 cup chopped onion
1/2 t chili powder
1/2 lemon juice
1 cup salsa
2 oz. corn chips
1/2 cup shredded cheese
1 T ranch seasoning mix
Directions
Boil chicken until cooked thru. Boil it in the broth if you want. Remove from pan and reserve. Add olive oil to saucepan and add all spices and onion. Saute over low heat unil soft. Add broth, corn, beans, salsa, lemon juice ( I just squeeze it right over the saucepan). Simmer over medium heat for 5-10 minutes.
Divide cheese into 4 parts, about 1/8 of a cup and do the same with the chips (about .5 oz) Add to your individual bowls of soup.
Adjust the spices to your liking. How I entered it is how I prepared it. The beans, chips and cheese are optional. The nutrition figures include the chips, beans and cheese. Each serving is 1 cup. If you want if more like a chili, use 1 cup less broth. It will thicken as it stands. I'm not exact on the prep and cook time, but it didn't take long. You could also substiture a corn tortilla cut up and baked for the tortilla chip. Enjoy.
