Introduction
This is such a healthy and nutritious snack! I eat it right out of the bag with a spoon, but you can add it to yogurt or any thing else that you like. This is such a healthy and nutritious snack! Ingredients
-
oatmeal
cinnamon
salt
slivered almonds
chopped walnuts
dried cranberries
extra virgin olive oil
honey
brown sugar
Directions
In a large bowl mix dry old fashioned oatmeal (not instant or quick), ground cinnamon and salt together. In separate bowl, mix olive oil, honey, and brown sugar together very well. Slowly incorporate wet mixture into dry oatmeal mixture (you'll need to use your hands for this). It will be a bit clumpy - that's OK. Place parchment paper (yes, you will be glad you spent the $2.96 for this!) on a cookie sheet. Pour ingredients onto paper and spread out as best you can. Place into a preheated 300 degree oven. After 10 minutes, remove from oven, use a metal spatula to turn-make sure you get all of it)! Place in oven for another 10 minutes, remove, stir in walnuts and almonds, mix together with spatula, and bake for another 10 minutes, remove from oven, mix in dried cranberries, and return to oven for final 10 minutes.
Place parchement paper with granola mixture on it on a cooling rack for about 20 minutes till cooled. Measure out into 1/4 cup portions and place zip lock bag. Makes 7 to 9 portions. Enjoy! (I've found that I can sit and eat large portions at once, but the calories are high, so pre-portioned is the way to go.)
*there are other options you can use such as: sunflower seeds, coconut, raisens, etc. But the Walnuts, almonds and cranberries are my favorites!
