Ingredients

    1/2 Cup Boiling Water
    1 Packet Unflavored Gelatin (I used Knox)
    1 Cup Fat Free Cottage Cheese (I use Breakstone's small curd)
    8 Oz Fat Free Cream Cheese
    1 Tsp Vanilla Extract
    3 Tbsp Splenda/Truvia

Directions

Get 1/2 cup of water boiling. As water is boiling stir in 1 packet of unflavored gelatin and vanilla extract until it is fully dissolved and no lumps remain. Put 1 cup of fat free cottage cheese, 8 oz (1 cup) fat free cream cheese and 3 tbsp of splenda/truvia in blender. Pour water mixture over ingredients in blender and put on puree setting. Blend for about 1-2 minutes, just until you don't see any clumps from the cottage cheese left. Pour mixture into pan or into 9 lined muffin cups for portion control. Put in fridge until set. The gelatin box should say how long it takes to set, the kind I had took 3 hours. After it's fully set enjoy!

*Add 1.5 tbsp cocoa powder for a chocolate cheesecake*

You can add 1 reduced fat vanilla wafer to the bottom of the muffin cups and pour the cheesecake mix over it - it's really good and adds very minimal calories. Or break a reduced fat grahm cracker in half and eat it with the cheesecake or top with your favorite fresh fruit. It's really good on its own too. (toppings/wafer/cracker not included in calorie count).
