Introduction

Easy to make and tasty. Needed to use up bits and pieces of things in the fridge. Very tasty. Didn't think to use file. Would have been great with some seafood if you have it. Easy to make and tasty. Ingredients

    Ingredients:
    Olive Oil, .3 cup
    Flour, white, .25 cup
    Celery, raw, 1 cup, diced
    Onions, raw, .7 cup, chopped
    Potato, with skin, 2 small (1-3/4" to 2-1/2" dia.), chopped
    Italian Sausage, pork, 4 link, 5/lb, cooked and sliced
    Chicken Breast, no skin, 6 ounces, cut into 1 - 2" pcs.
    Tomato Sauce, 1 cup
    Chicken stock, home-prepared, 1 cup
    Zucchini canned with italian style tomatoe sauce, 1.5 cup
    Spinach, frozen, 1 package (10 oz) yields
    Parsley, dried, 1 tbsp
    Garlic, 1 tsp
    Ditalini pasta, 2 oz. dry

Directions

Makes 8 servings. Add oil to dutch oven and place over medium heat. Add flour, stirring constantly. When it reaches the color you like, add garlic, celery, chopped potato and onion. Saute for 3 - 5 minutes. Add chicken and sausage and saute for 3 - 5 mins. Add remaining ingredients and simmer for 30 minutes. (Add water if too thick)
