Ingredients

5-6 Chicken Breasts
1 can coconut milk
1/2 cup fresh sliced mushrooms
1 cup white wine (or apple juice)
1 tsp. curry powder or paste
1 cup chicken broth
1-2 cups frozen peas and carrots
salt and pepper
Directions
Brown chicken and put in bottom of crock pot.
Mix sauce and pour over chicken
Place veggies on top, add mushrooms. Salt and pepper to taste.
Cook in crock pot all day.
