Ingredients

    * Bread, Ezekiel, Whole Grain, 34g=1slice, toasted
    * Prunes, dried, 3 pieces (30g), cut in halves
    * Mozzarella Cheese, Fresh, 1 oz
    * Egg, large, hard boiled, sliced
    * Roast Beef, 2 oz
    * Jalapeno peppers, canned, 7-10 slices
    * Spinach, fresh, 1/4 cup, whole leaves (divided)

Directions

Makes 1 open sandwich.

1. Boil the egg, cool it and slice. Crisp up a piece of bread in toaster. Cut prunes lengthwise in half. Slice fresh mozzarella cheese and beef. Drain jalapeno slices.

2. Assemble the sandwich in following layers:
- toasted bread
- prunes
- mozzarella cheese
- egg
- jalapenos
- spinach leaves (half)
- roast beef
- the rest of spinach (4-5 leaves)
