Ingredients

Olive Oil Cooking Spray
Black Cherry Tomatoes, 2 cups (You can use whatever variety of grape or cherry tomatoes your market carries)
Roma Tomatoes, 8
Jimmy Nardello Sweet Red Peppers, 6 (You can use 2 sweet red bell peppers if you can't find the Nardellos)
Garlic, 3 Cloves
Sea Salt, 1 Teaspoon
Morningstar Farms Recipe Crumbles, 2 cups
Spaghetti Squash, 3 cups, pre-cooked
Parmesan Cheese
Directions
Spray medium baking pan lightly with olive oil spray.
Spread cherry tomatoes, Roma tomatoes, and sweet red peppers and garlic cloves in a single layer in pan.
Spray top of vegetables with olive oil spray.
Sprinkle sea salt lightly over the vegetables
Roast the vegetables for about 30 minutes or until the tomatoes begin to split.
Run the vegetables through the blender on puree until slightly chunky.
Stir the Crumbles into the sauce.
Serve over three cups of prepared spaghetti squash*
Sprinkle with Parmesan Cheese
Serve with salad and enjoy!
*If you've never made spaghetti squash, it's easy. Cut the squash in half lengthwise. Clean out seeds. Boil the squash for about 30 minutes. Scrape the squash out of the shell with a fork.
