Introduction

This is obviously not a traditional recipe especially because I omitted jalapenos. But is it delicious! This is obviously not a traditional recipe especially because I omitted jalapenos. But is it delicious!
Number of Servings: 10

Ingredients

    2 cups diced tomatoes
    1 large avocado
    1 15.5 oz can black beans, drained
    1/2 cup cilantro
    1/4 cup lime juice
    1/4 cup diced white onion
    1 tsp minced garlic


Directions

1. Remove skin and seed from avocado and discard. Dice avocado and place in small bowl. Soak in 1/4 cup lime juice.

2. Chop cilantro leaves into small pieces, discarding stems.

2. Drain black beans, toss in large bowl with tomato, avocado, lime juice and cilantro.

4. Add onion and garlic and carefully combine.

5. Chill in closed container in refrigerator for at least 2 hours so that flavors can meld.

6. Serve and enjoy!
