Ingredients
1/3 cp Maple Syrup, Pure, Organic
Banana, fresh, 1 medium (7" to 7-7/8" long)
2 tbsp Olive Oil
1 egg
1/2 cp Whole Wheat Flour
1/2 cp white flour
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp nutmeg
2 cp Apples, fresh shredded
1/4 cp Pecans
1 tsp Vanilla Extract

1. In a mixing bowl, beat together the banana, maple syrup and egg until blended. In a bowl, combine the flour, baking soda, salt, nutmeg and cinnamon; gradually add to the sugar mixture and mix well. Stir in the apples, pecans and vanilla until well combined.
2. Spread mixture into an 8-in. square baking dish coated with nonstick cooking spray. Bake at 350 degrees F for 35-40 minutes or until pudding is lightly browned and springs back when lightly touched.
