Ingredients

    *Crisco Pure Vegetable Oil, 4 tbsp
    *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.)
    Onions, raw, 3 large
    Jalapeno Peppers, 3 pepper
    Green Peppers (bell peppers), 2 cup, strips or 4 medium
    *Cumin seed, 1 tbsp
    Garam Masala ( 3tbsp)
    Tomato Sauce, .5 cup or 1 small can of sauce
    Curry powder, 4 tbsp
    Garlic, 3 tsp
    Salt, 3 tbsp
    black pepper, 3 tbsp
    Pepper, red or cayenne, 1 tsp

Directions

heat oil in a medium to large frying pan on med-high heat
put in cumin seeds and stir until golden brown
next add your onions, jalapeņos,garlic,ginger and cook until everything is caramelized and garlic and ginger is cooked golden brown.
next add all your spices and cook 3 to 5 mins adding water as needed to keep it from sticking turning the heat down to meduim heat.
add tomato sauce and simmer for 3 to 5 mins
next add your green peppers and potatos and cook until potatoes are soft and green peppers are cooked slightly soft about 10 to 20 mins.

makes 6 1cup servings at 259 cals.
