Serve this chicken salad, that is bursting with flavor and easy to make, on a bed of lettuce, noodles, or rolled in lettuce leaves, basil leaves, or rice paper. All the herbs in this salad will make you say wow! Ingredients

1 Boneless skinless cooked Chicken Breast
2oz. Trader Joes Thai Lime and Chili Cashews
2oz. Trader Joe's - Dried Fruit - Chile Spiced Pineapple
2 stalks lemon grass
6 large Basil leaves
4 Fresh Mint Leaves
2 oz. Cilantro Leaves
1 oz. Fresh Ginger Root
1 Clementine (juice only)
2 Tbsp. Rice Vinegar
4 cups mixed salad greens (spring mix)
Directions
Using fresh ingredients, finely chop the first 8 ingredients. Mix all together in a bowl and add the clementine juice and vinegar. Stir and let the flavors blend covered in the refrigerator or serve immediately.
I enjoyed this salad over a bed of mixed baby greens, but imagine it would be a great lettuce wrap as well.
Tried it again as a salad but omitted the oil and it was still great! Added 1 each fresh chopped tomatoes, cucumber, radish, green onion, orange bell pepper, nectarine, apple, and used peanuts that I covered in a Thai pepper sauce. With all the added vegis and fruit, I also added more meat and it served 4 large Salads. My Hubby and kids all love it!
