Ingredients

12 oz fat-free sour cream
1 cup shredded Monterey Jack cheese
.5 cup shredded fat-free cheddar cheese
15 oz green enchilada sauce
12 corn tortillas
2 ounce can chopped black olives
3/4 pound ground turkey
1 cup onions
Directions
1) Preheat oven to 350 degrees F (175 degrees C).
2) Brown turkey and onions.
3) In a small bowl, combine the sour cream and 3/4 of the cheese.
4) Into a 9x13 inch pan, pour a small amount of enchilada sauce to coat bottom of pan. Layer 4 tortillas (cut into 4 wedges each) on bottom of pan. Layer half of the cheese-sour cream mixture, 1/2 of the turkey mixture, and 1/2 of the olives over the tortillas. Repeat this layer once more. Pour the remaining enchilada sauce over the final layer of tortillas. Top with remaining cheese.
5) Bake for 20 minutes. Cut into squares and serve.
