Ingredients

Spaghetti Squash, 4 cups (2 1/2-3 lbs._)
Olive Oil, 1 tbsp
Onions, raw, 1 medium (2-1/2" dia) chopped
Garlic, 2 cloves minced
Egg, fresh, 2 large lightly beaten
Egg white, 2 lightly beaten
Salt, .25 tsp
Pepper, black, 1 dash
Directions
Makes 8 1/2 cup servings
1. Preheat over to 375 degrees F. Lightly coat a 1 1/2 quart casserole with cooking spray, set aside.
2. Cut Spaghetti Squashin half length wise: remove seeds abd strings. Place one half of the squash cut side down, in a microwave-safe baking dish. Using a fork, prik the skin all over.
3. Microwave the saghetti squash on full power (high) for 6-7 minutes ar until tender; carefully remove squash from baking dish. Repeat with the other spaghetti squash half. (You can also place both halves, cut side down, in a shallow baking pan and bake at 375 fir 40 minutes or until tender) Let the squash cool in the pan on a wire rack until it is easy to handle.
4. In a medium skillet, heat olive oil over medium heat. Add onions and garlic; cook and stir about 5 minutes or until the onion starts to brown.
5. Use a fork to scrape flesh from the spaghetti squash halves. Place the shreadded squash in a large bowl. Cool slightly.
6. Add onion mixture, eggs, egg whites, salt, and pepper to shredded squash. Pour squash mixture into the prepared cassarole.
7. Bake kugel about 35 minutes or until set near center. Cool for 15 minutes on a wire rack. Serve warm.
For Sweet Kugel: Prepare as directed through step 3. Omit the oil, conion, garlic, and pepper. Instead , add 1/4 C sugar or sugar substitute (splenda granular or Sweet'N Low-Follow package directions to use product amount equivalent to 1/4 C suar).
