Ingredients

    12 ounces (3/4 pound) wild Alaskan salmon filet
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1 teaspoon lemon zest
    1 teaspoon orange zest
    2 lemon wedges
    2 orange wedges
    olive oil spray

Directions

Makes 2 main dish servings

Preheat oven to 450°F.
Place filets skin-side down in a medium roasting pan that has been sprayed with olive oil.
Squeeze one lemon wedge and one orange wedge over both filets.
Season with salt and pepper, then spread lemon and orange zests over both filets.
Bake 12 - 16 minutes, until fish is opaque throughout and flakes easily with a fork. Serve with remaining lemon and orange wedges.

NOTE: the ZEST of citrus fruit is only the outer, colored part of the peel of the lemon or orange. Use a fine grater or zester to remove the zest . Stop when you get to the white part of the peel, as this will make it bitter.
