Introduction

Ingredients

    Vegetables (Sub in your own favorites)
    Bell Peppers, 1 yellow, 1 red and 1 orange
    Portabello Mushrooms, fresh, 3 cup, slices
    Zucchini, 2 cup, sliced

    Marinade
    Vinegar (cider, white or balsamic), 1/2 cup
    Olive Oil, .2/3 cup
    Lime Juice, 2 lime yields (remove)
    Salt, 1 tsp (remove)
    Granulated Sugar, 1 tsp
    Sambal Oelek Chili Paste, 2 tsp
    Pepper, black, .1/2 tsp

Directions

Wash and cut veggies into bite size pieces and place in a large bowl with cover or large ziploc bag.

Mix marinade ingredients in a separate bowl until well combined.

Pour marinade over veggies and mix gently to cover all veggies with marinade. Place in refrigerator overnight.

To prepare brown veggies in a non-stick pan over medium heat to desired texture.

Serve them any way you want. I suggest over rice or in a wrap with some beans. Anything you can think of, this is a very versatile dish!
