Ingredients

Use 1 pound of turkey or 95% lean ground beef
1-pound of lean ground beef
1 egg white
1 cup of chopped spinach
1/2 cup no sodium bread crumbs
pepper
parsley
oregano
garlic powder (not garlic salt) or use fresh garlic which would be better
Directions
Depending on what size meatball you want. I usually get 24 meatballs out of these measurements and usually have 4 meatballs per serving. These totals are figured at 6 servings.
Mix everything together real good and roll out the size meatballs you want. Preheat a skillet with olive oil and cook the meatballs until they are done. I always cook mine on low.
The choice is yours which kind of sauce you want to use. I have one listed above or here. Since you are using a very lean ground beef or turkey and cooking with olive oil, you will not have a lot of grease so I leave mine in the pan and add the sauce with the following ingredients. Simmer on low for a few minutes.
