    6 Chicken Breast
    ~30 Saltine Crackers
    2 tbsp Flour
    2 tbsp Potato Flakes
    1 tsp Seasoning Salt
    1/2 tsp Black Pepper
    1 Egg

    1/4 cup vegetable oil to cook with


Place crackers in a large resealable plastic bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoning salt and pepper to the bag. Seal and shake to mix together.
Beat egg in a shallow dish or bowl.
Heat oil in large skillet over medium high heat.
Dredge chicken in egg then place in bag, seal and shake to coat. Reduce heat to medium and cook coated chicken for 15-20 minutes, turning frequently until golden brown and cooked through.

  • This is the same recipe I use for fried chicken and it's amazing. I usually use tenderloins instead of breasts, since they cook faster. I also use garlic salt rather than seasoning salt, but any dry seasonings you like would work well. And I cook with olive oil instead of vegetable oil. - 8/8/11
