Ingredients

    1 small eggplant
    1/2 clove garlic, finely minced
    1 tbs olive oil
    2 tbs greek yogurt-plain
    1 tbs lemon juice
    salt and pepper to taste

Directions

Poke eggplant several times with a fork and then roast in an oven pre-heated to 400 degrees Fahrenheit.

Once eggplant appears slightly shriveled and sunken (About 30 minutes), take out of the oven and allow to cool completely.

Scoop out the flesh and discard skins. In a food processor, combine eggplant, garlic, olive oil and lemon juice. Puree until just blended. Pour into a small bowl.

Swirl in greek yogurt and season with salt and pepper to taste. Serve with raw vegetables or pita chips. Yields approximately 8 servings of about 2 tablespoons of dip per person.
