    1 tb. olive oil
    1 small onion
    3 garlic cloves
    3 Cups water
    1 1/4 Cup red lentils
    1 can tomato sauce (or 2 fresh tomatoes if in season)
    1/2 C salsa
    1 Cup Spinach
    1 Cup sliced mushrooms

    corn bread mix (jiffy size)
    1 cup corn
    3/4 cup shreadded cheese
    water or 1 egg


in olive oil saute chopped onion and garlic
add lentils and cook with tomato sauce salsa and water 35-40 minutes.
while cooking mix together topping
when lentils are done convert to a casserole dish.
sprinkle topping on top (add red pepper if desired)
bake uncovered 15-20 minutes at 400 F.
