A chewy, nutty and caramelly bar cookie that will take your tastebuds to high heaven. Treat yourself or your gluten-free friends to this delicious creation. A chewy, nutty and caramelly bar cookie that will take your tastebuds to high heaven. Treat yourself or your gluten-free friends to this delicious creation.

Ingredients

    1/2 c stick margarine
    2/3 c brown sugar, packed
    1 tsp vanilla
    5 oz lite silken tofu, pureed
    1c brown rice flour
    1/2 c defatted soy flour
    2 tsp baking powder
    1/4 tsp sea salt
    1 c chopped hazelnuts
    2/3 c toffee bits

Directions

Preheat oven to 350F. Grease a 9x13" pan.
Cream margarine, sugar, vanilla and tofu puree.
Add dry ingredients and mix well. (Dough should be pretty smooth, but thick)
Fold in nuts and toffee bits.
Bake for 15-20 minutes.
Cool and enjoy!
