Ingredients

    2 tablespoons of olive oil
    6 medium Raw Potatoes - cut into small cubes
    3 cups of chicken broth
    1 cup of chopped onions
    3 tablespoons of corn starch - 47 grams
    8 ounces of slices mushrooms - 227 grams
    3 cups of 2% milk

Directions

Pour olive oil Into a large soup pot. Brown onions. Coat potatoes and mushrooms with corn starch and pepper. Add coated potatoes and mushrooms to onions. Pour in chicken broth and simmer mixture until potatoes are cooked - stirring frequently. Add milk and simmer for 5 minutes.
