Introduction

This is very good and simple to make. It needs to marinate overnight or you can freeze the chicken right in the marinade, for OAMC. Simply defrost in the refrigerator overnight. Ingredients

    4 halved, skinless, boneless Chicken Breasts
    1/3 c sliced black olive, rinsed
    1/3 c pitted, halved dried prunes
    3 cloves minced garlic
    2 T capers, rinsed
    1/4 c white wine
    2 T Splenda brown sugar
    2 T red wine vinegar
    1 T oregano
    2 T olive oil

Directions

In a small bowl, mix splenda brown sugar, white wine, red wine vinegar, olive oil together. Pour mixture into ziploc gallon size bag. Add the rest of the ingredients. Seal bag and mix until the ingredients are well blended and chicken is covered. Refrigerate overnight. This also can be frozen in the marinade, for OAMC.

If frozen, defrost in refrigerator overnight. When thawed, follow the rest of instructions.

Spray baking dish with pam. Preheat oven to 350 degrees.

Place chicken in baking dish. Pour mixture around chicken. Bake uncovered for 30 minutes or until chicken cooked through. I use the thin chicken breast and they take only approximately 15 mins. Do not overcook because the chicken will become dry.

Suggestions: Serve with wild rice, or coucous, and broccoli, and spoon the broth over the top.
