Ingredients
-
2 cups cooked quinoa
1 cup cooked brown rice (or 3 cups cooked quinoa, or 3 cups cooked brown rice...whatever you have on hand)
1 can chickpeas, drained, rinsed & mashed
1 can kidney or adzuki beans, drained, rinsed & mashed
1/2 onion, chopped fine (recipe calls for 1.5 cups but I don't like them that much)
1/2 cup shredded carrot
1/2 cup breadcrumbs
1/2 cup sunflower seeds
1/4 cup Bragg liquid aminos (or 3 tbs if you used salted sunflower seeds)
1 cup chopped parsley
2 large eggs, lightly beaten
1/2 tsp each, ground savory & sage
Directions
1. Stir together all ingredients in large bowl. Shape into 9 1/2" thick patties.
2. Coat nonstick or cast iron skillet with cooking spray & heat over med-high heat. Cook patties in skillet 4-5 minutes per side, or until browned on the outside & cooked through on the inside. **Use a wide, solid spatula to flip;they can be fragile.
