Introduction

This is easy to make, scales well for large groups, and is something that you can have simmering on the stove while you enjoy your guests. Chicken can be served on the side to incorporate vegetarian needs. NOTE: white mushrooms are fine, but Baby Bella or crimini give more flavor. Ingredients

    2-3 tb olive oil
    1-2 boneless, skinless chicken breasts, cut into strips (opt)
    1 yellow bell pepper, seeded and sliced into strips
    12 med. white mushrooms (or Baby Bella or crimini)
    1 can Hunt's or Muir Glen Fire Roasted diced tomatoes (do not drain)
    1 c tomato sauce
    2 tsp. Italian Seasoning
    1 box pasta, any shape (about a pound)

Directions

Start heating a large pot of water for pasta. In a large skillet, heat oil on medium heat until it moves easily around the pan. (If using chicken, cook chicken on both sides until cooked through, then remove from pan and keep warm.) Add yellow bell pepper to skillet and cook, stirring often, about 5 minutes until pepper is soft. Add mushrooms and continue stirring for about 5 minutes until mushrooms are cooked. Add zucchini and continue stirring for about 7 minutes until cooked and pliable. Add can of fire roasted tomatoes (including juice), tomato sauce and Italian seasoning. Stir until combined. Turn heat to low and continue to cook for 15-30 minutes. Meanwhile, add pasta to boiling water and cook as directed. Serve sauce and chicken over pasta.
