Ingredients

Mashed Potatoes, 4 medium potatoes mashed with:
Almond Breeze Almond Milk, Unsweetened Original, 1 oz
Butter, unsalted, 2 tbsp
Butter, unsalted, 1 pat
Onions, raw, .5 large
Garlic, 10 cloves
Mushrooms, fresh, 3 cup, pieces or slices
Mixed Vegetables, frozen, .5 package (10 oz)
Mozzarella Cheese, part skim milk, 1 oz
Directions
Boil and mash about 4 potatoes, set aside. I typically mash potatoes with a pat of butter and a splash of unsweetened, original flavored almond milk. Left over’s work very well for this recipe.
Wash and slice whole brown and white mushroom. Set aside. Peel cloves of garlic, dice onion and sauté together in a pat of butter.
Layer the raw mushrooms, sautéed onions and garlic and frozen or canned mixed vegetables. If using canned, be sure to drain the water. Next, layer one ounce of cheese, top with mashed potatoes and bake at 350 degrees F for approximately 20 minutes. Let stand for about 10 minutes before cutting. Serve, Enjoy.
