Ingredients

    1 lg can crushed tomatos
    1 can of low sodium fat free chicken broth
    1 cup chopped celery
    1 large onion chopped
    4 cloves of garlic, minced
    1 bay leaf
    1 tsp of Thyme
    1/4 cup of fresh basil, finely chopped
    1 cup of dice carrots
    2 cups of baby bok choy, chopped
    1 hawaiian chili pepper or thai pepper or 1/2 tsp crushed pepper flakes....to your taste
    1 1/2 cups of canned clam meat with juice
    salt & pepper to taste

Directions

Sautee together onions, garlic, celery, and carrots until tender. Added fresh ground pepper and salt to taste. Added thyme, basil, chili pepper and bay leaf. Drain clams reserving juice. Added clams and sautee for 2 minutes. Add clam juice, tomatoes, and chicken broth, bring to a boil. Lower heat and simmer for 20-30 minutes. Add water or additional chicken broth is soup base is too thick. Should make 8 1cup servings.
