    ONE 15 OZ. CAN BLACK BEANS, RINSED AND DRAINED
    ONE 15 OZ. CAN GARBANZO BEANS, RINSED AND DRAINED
    1/2 C. CHOPPED SCALLION
    2 STALKS CELERY, SLICED
    1/2 C.CHOPPED GREEN BELL PEPPER
    1/2 C. CHOPPED RED BELL PEPPER
    ONE 4 OZ. CAN CHOPPED GREEN CHILIES
    1 PACKAGE FROZEN MIXED VEGTABLES
    1/4 C. CHOPPED FRESH PARSLEY
    1/4 C. CHOPPED FRESH CILANTRO
    1 C. VINAIGRETTE

Directions

PREPARE RICE ACCORDING TO PACKAGE AND LET COOL.COMBINE ALL THE INGREDIENTS IN A LARGE BOWL AND MIX WELL. COVER AND REFRIGERATE FOR AT LEAST 2 HOURS TO ALLOWTHE FLOVERS TO BLEND. CAN BE EATEN ALONE AS A SALAD, WITH CHIPS OR RICE CAKES. MAKES 8 SERVINGS
