Ingredients

    Oat Bran, 1.75 cup (remove)
    *Bob's Red Mill All Natural Egg Replacer (100% vegetarian), 1 serving = 1 tbsp, 1 tbsp (remove)
    Baking Powder, 3 tsp (remove)
    *Sugar In The Raw, 6 tsp (remove)
    Salt, 1 dash (remove)
    *Canola Oil, 3 tbsp (remove)
    Almond Breeze Almond Milk, Original, 8 oz (remove)
    Blueberries, frozen (unsweetened), .5 cup, unthawed (remove)
    Carrots, raw, 1 cup, grated (remove)
    *zuchini, 1 serving (remove)
    Walnuts, .25 cup pieces or chips (remove)
    Almonds, .25 cup, sliced (remove)
    Pecans, .25 cup, chopped (remove)
    grate the carrots and zuchini
    Mix the egg replacer
    in mixing bowl add dry ingredients (oat bran, sugar, baking powder, salt)
    In separate bowl mix egg replacer, oil and milk. make well in dry ingredients and add liquid to the dry. Stir until mixed. Add zuchini, carrots, blueberries and nuts. fold until well mixed.

Directions

put mixture in large muffin tin. I use the large silicone and it makes 6 muffins or it will make 12 regular muffins. Bake at 425 degrees for 25 minutes
