Number of Servings: 4

Ingredients

    500-600 gram (0.575kg) Salmon Fillet
    1/4 cup mustard
    1 Lemon
    1 tbsp fresh chopped chives
    4 cups Fresh Spinach
    4 tbsp Light Feta Cheese

Directions

Cut lemon in halves and juice into mustard. Mix well with a fork. Spoon evenly onto salmon fillet. Sprinkle chopped chives and salt and pepper to taste on top of mustard sauce. Bake for 20 minutes at 375C, check salmon to see if cooked through at thickest point. Cook for another 5-10 minutes if needed. Serve hot out of the over atop fresh spinach and a sprinkle of feta cheese.
