Introduction

I wanted to make a pumpkin and bean dip but only had 1/4 cup pumpkin. I'd gotten canned roasted red peppers at the dollar store, so I substituted one pepper for the remainder of the pumpkin. Ingredients

    1 cup black beans, drained and rinsed
    1/2 cup white beans, drained and rinsed
    1/4 cup pumpkin, pureed
    1/2 cup roasted red pepper, canned (1 whole pepper)
    2 Tbsp. olive oil
    2 Tbsp. Realemon juice (or juice of two fresh lemons)
    1/2 tsp. cumin
    1/4 tsp salt
    1/4 tsp. pepper

Directions

Place all ingredients in a blender and whir. Makes 16 2-Tbsp. servings.
