Introduction

This is a recipe I got from a friend to make and bottle salsa. It was quite simple and absolutely delicious! Feel free to change the vegetables to something you love or even add some beans. Ingredients

    5 Cups of fresh tomatoes
    3 or more cloves of garlic
    3 Cups of chopped onions
    4 Cups of corn
    3 Cups of chopped carrots
    3 Cups of chopped celery
    3 green peppers - chopped
    10 Jalapenos or one small jar of pickled jalapenos
    5 Tbsp of coarse salt/pickling salt
    2 Cans of tomato paste (6oz)
    2 Tsp of dry mustard
    1 Tsp of tumeric
    1 cup of brown sugar (or less)
    2 cups of vinegar
    1 Tbsp of flour

Directions

Chop carrots, celery, onions, green peppers and jalapenos.
Place in large roaster and sprinkle with salt. Soak overnight.
Drain and squeeze out all excess liquid and add garlic.
Chop tomatoes.
Place remaining ingredients in a large mixing bowl and mix well. Add all other vegetables and mix well.
Bake in the oven for about 1 hour.

Perfect for bottling.

Makes 30 half-cup servings.
