Introduction

Ingredients

5 black plums very ripe. Mine were softer than I'd eat fresh.
1/4 cup granulated sugar.
Directions
Makes 8 2 tablespoon servings
slice the plums leaving the skin on (gives color and pectin, and some fiber too!) into small bite sized chunks; discard the pits (into the compost bin ideally.)
Place in a sauce pot and sprinkle a quarter cup of sugar on top, over medium low heat. stir and cover.
Stir every 5 minutes or so and when the syrup coats the back of the spoon put in a clean jelly jar with sealing lid and ring. If the jar's not too big you'll hear the "ping" of the jar sealing as it cools. This should keep a couple of weeks in the fridge.
The pectin in the fruit will "set" the mess overnight. Ours wasn't a "hard set" and we have a nice dark purple sweet glop to put on corn tortillas, or bread with our tea. I suspect it would be great on pancakes or waffles too.
